Ganzo is the creative laboratory of APICIUS International School of Hospitality. Ganzo is a school restaurant that reinterprets Italian cuisine from an international perspective, open to the public and operated by the students and faculty of Florence University of the Arts through experiential learning. The wines featured at Ganzo represent specialty Italian wine producers who are a part of institution’s partnership with industry professionals, APICIUS FRIENDS.
Ganzo is managed by the non-profit Fondazione di Partecipazione Palazzi – Florence Association for International Education.
